they look beautiful! i'm also a "gnocchi student" -- a friend taught me how to make potato gnocchi when i was studying in italy last year and i found it fairly easy, so i've been trying out pumpkin and butternut squash this autumn. however, butternut squash is much stickier! my first batch was waay too heavy, because my dough kept taking flour, and i've seen recipes that recommend 3-4 cups of flour for a butternut squash! i tried another batch with around 1:1 mashed squash: dough, and it was enough to roll out -- on a *very* well floured surface, but the gnocchi was too sticky to shape. they boiled and tasted very flavourful, but looked hopelessly deformed.

any suggestions?

i'd love to see a photo of the gnocchi dough itself, just to see how blended it really should be.

Don't be too hard on yourself. I serve up a big bowl of fresh grapes and raw almonds when I am very busy. When I don't have time to cook, we have an opportunity to eat raw and healthy.

Good health to you and yours,
Many blessings.

Oh, I hope you like them! They really are one of my favorite foods, but they are time-intensive, which is why I usually just make a bunch at once and freeze some.

Welcome back. You have had such a tough time - it is so good to hear that you are able to slowly return to normal. Yay for healthy food.
